Meal Planning Monday #2 (13 Feb)

Another Monday… I swear that weekends go by on fast-forward.  Last week’s meal-planning was a success.  I swapped a couple of days around when I found myself feeling worn-out one evening and needed a fast (and super-easy) meal.  I love being able to just pull a bag of chilli out of the freezer!  My little boy also surprised me by going mad for the Pork & Fennel Meatballs, so I’ll be making those again for sure.

M: Chicken and pea ‘risotto’ with crispy pancetta on top

T: Cottage pie, spring greens

W: Fried rice (probably with roast chicken thighs rather than diced ham)

T: Cottage pie, roasted Brussels sprouts

F: Caribbean chicken curry with cauliflower rice

S: Cheesy pork burgers, sweet potato fries, roasted green beans

S: Chocolate chilli with cauliflower rice, salsa and guacamole

    Ooh cheesy pork burgers sound fab

      They’re really good! I just season some pork mince and wrap it around a chunk of cheddar, making sure there aren’t any gaps. We bought some amazing cheddar with fresh sage leaves in it and it works so well with the meat.

      Because the burgers become quite thick with the addition of the cheese, you’ll need to sear them in a pan and finish off in the oven. This isn’t a hardship for me, as the oven is on anyway for sweet potato fries 🙂
